Chow Mein ‘n Noodles

INGREDIENTS:
½ to 1 lb of boneless raw chicken
1 Tbsp soy sauce
1 Tbsp water
¼ tsp garlic powder
1 tsp oil
1 tsp cornstarch
2 3-oz pkgs ramen noodles
¼ Cup chicken broth or water
2 green onions, sliced
2 Cups shredded cabbage
2 carrots, cut into julienne strips or coarsely grated
3 stalks celery, diagonally sliced
INSTRUCTIONS:
Cut chicken into very thin strips. Mix soy sauce, water, garlic powder, oil, and cornstarch.
Marinate meat in the sauce. Remove the flavor packets from the ramen noodles and set
aside. Cover the noodles with very hot water. Let sit a few minutes. Drain and set aside.
Heat wok or frying pan to very hot. Add chicken broth or water. Add meat, and stir-fry
until meat loses its color, about 2 minutes. Remove meat from wok. Add green onions
and stir-fry for a few seconds. Add cabbage, carrots, and celery. Stir-fry 1 to 3 minutes.
Return meat to wok; add the noodles. Cover and let steam for 1 minute. Sprinkle flavor
packets from ramen noodles over all. Toss and serve immediately.
Yield: 6-8 servings.
